Hi sweethearts!
Today we go back to my cooking lessons, showing you a very easy recipe that will make your friend think you just won masterchef! First of all this recipe isn’t mine, I adapted it from the one written by the genius Sergio Barzetti in Tutti a tavola! book. Let’s start with the ingredients (for 5 people):
400 g of bucatini pasta
59 g of pitted Taggiasche olives
84 g of peeled almonds
167 g of cherry tomatoes
42 g of shaved parmesan cheese
34 basil leaves
2 bay tree leaves
extra virgin olive oil
salt
It looks yummy, doesn’t it? For me just reading tomatoes, basil and olives makes me smell them and I feel immediately hungry (I’m a vegetables junkie!). Anyway let’s start the how-to-do part of this super easy sauce!
We start taking a hand blander, expacially its glass, and composing layers of what we are going to mix next. So put in it your olives, 3 tomatoes, parmesan cheese, almonds and 4 spoons of oil. Then put it aside.
Ciao dolcezze!
sale
Sembra gustoso no?
Now take the tomatoes and cut them in halves. Take a pan, pour in it a bit of oil and then your half tomatoes and cook them for 10 minutes.
Ora prendete i pomodorini e tagliateli a metà.
It’s time now to put the water in the pot with the bay tree leaves and make it boil it. When it does add salt and wait for it to boil again then add your bucatini and make them stew. In the meantime take the glass we prepared before, your blender and blend it. If after a little it seems like nothing is blending DON’T PANIC, it’s something normal when we use a lot of solid ingredients, just take you oil bottle and add oil till it starts blending again.
When your sauce is blended, take you basil leaves, add them to the sauce, and blend again. Like before, if it starts not blending, no problem, this time take a little of your pasta cooking water with a ladle and add it to the glass, your sauce will blend again.
While you were blending, the bucatini are probably cooked, so drain them, and add them to the pan (away from the burner!) where you have tomatoes. Add also the pesto sauce and mix it all. Your bucatini with olives and almonds pesto sauce are ready!! Enjoy them 😉

Godeteveli 😉
