Spring is finally here and we have to say goodbye to all these hot sweet fatty winter meals, but let’s do it with style! I did with a new version of my pumpkin and potatoes cream I showed you some time ago adding Taleggio, a tipical creamy italian cheese. So let’s explore the little variations of this recipe together and let’s try it out! ;-P
Ingredients for 5 people:
2 medium potatoes (mine were one big and one small, they were around 425 g, but consider you have to peel them)
700 g of pumpkin
1 sprig of parsley
1 small leek
1 chili pepper
250 ml of milk
84 g of parmesan cheese
1 bay leaf
50 g of butter
salt to taste
pepper to taste

Wash and peel the potatoes. Cut them into cubes. Cut into pieces the pumpkin too. Wash and mince the parsley. Clean and wash the leek then cut it into washers. Now put the leek in a big pot with 30 g of butter and the bay leaf. Make it sear for a few minutes always blending. Now put in the pot potatoes and pumpkin and make them sear too while you keep blending. Add the chili pepper and cover all with water (I’ve also added a some spoon of broth, cause I prepare broth every week, if you have broth at home try it too!). Salt and season. Make it boil and when it does cook it for 40 minutes. After that turn off the fire and remove the chili pepper and the bay leaf. Whip it all with a hand blender. Warm up the milk aside. Then add the milk to your cream and make it boil again. Once it starts boiling turn off the fire. Add the remaining butter and amalgamate it. Add the parsley and the parmesan cheese and amalgamate them too.
La primavera è finalmente è arrivata e con lei l’ora di salutare tutti i caldi, gustosi, cicciosi cibi invernali, ma facciamolo con stile! Io l’ho fatto con una nuova versione della crema di patate e zucca che vi avevo proposto un po’ di tempo fa, aggiungendoci il Taleggio. Vediamo quindi insieme le piccole variazioni di questa ricetta e proviamola a preparare! ;-P
Ingredienti per 5 persone:
2 patate medie (le mie erano una grande e una piccola, intorno ai 425 g, ma considerate che dovete anche pelarle)
700 g di zucca
1 mazzetto di prezzemolo
1 porro piccolo
1 peperoncino
250 ml di latte
84 g di parmigiamo reggiano
1 foglia di alloro
50 g di burro
sale q.b.
pepe q.b.

Lavate e pelate le patate. Tagliatele a cubetti. Tagliate a pezzetti anche la zucca. Lavate e tritate il prezzemolo. Pulite e lavate il porro e tagliatelo poi a rondelle. Ora mettete il porro in una pentola abbastanza capiente con 30 g di burro e la foglia di alloro. Fatelo rosolare per qualche minuto sempre mescolando. Ora mettete nella pentola anche patate e zucca e fatele rosolare mentre continuate a mescolare. Aggiungete il peperoncino e coprite tutto con acqua (io ho aggiunto anche un po’ di brodo, siccome preparo il brodo ogni settimana, se avete del brodo in casa provate!). Salate e pepate. Portate a bollore e poi cuocetelo per 40 minuti. Dopodichè spegnete la fiamma e togliete il peperoncino e la foglia di alloro. Frullate tutto con un frullatore a immersione. Scaldate il latte a parte. Aggiungete quindi il latte alla vostra crema e fatela bollire di nuovo. Quando bolle spegnete il fuoco. Aggiungete il burro restante e amalgamatelo. Aggiungete prezzemolo e parmigiano e amalgamate anche questi.
